Warner-Bratzler shear force (WBSF) is a method of evaluating tenderness in whole muscle cuts. Here a core obtained from a pork loin chop is being evaluated. The muscle fibers are placed perpendicular to the WBSF blade and then the amount of force required to shear the muscle is measured.
